Touch controls in Genshin Impact — remappable?

Posting from the other side of a very long troubleshooting session. Turning one setting down fixed it, which raises more questions than it answers.

What actually changed my results was slowing down and reading the tooltips properly instead of rushing. Will update the post if I find a cleaner solution.
